Healthy banana loaf

Banana loaf (the unhealthy kind) is one of my favourite cakes/treats/food ever. Whenever there is a family party or i just fancy having cake for my cheat meal i’ll rustle one up. I love it that much that i know Mary Berry’s recipe off by heart now *don’t judge me*. Sadly though it’s not the healthier, so i figured it was about time i created my own healthy version that i could have as a snack, or even for breakfast. It was a bit of a guess, but what i created is rather darn yummy! It’s super simple, too. Keep scrolling to find out the recipe.

Healthy banana loaf

 

INGREDIENTS

2  1/2 cups plain Scottish oats
1/4 cup wholemeal flour
1/4 cup maple syrup
1/4 cup melted coconut oil
3 small mashed bananas
1 egg
1 tspn cinnamon
50g chopped dark chocolate
1 tspn baking powder
1/4 cup chopped dates (optional)

METHOD

Pre – heat oven to 180 degrees C
Combine all ingredients in a bowl until a wet mixture forms.
Pour mixture into a lined baking tin
Bake for 40 minutes

Granted, this version isn’t as light, fluffy and sugar filled as Mary Berry’s version, but it’s healthy and seriously delicious. Plus, there is absolutely no guilt included. You could also add pecan nuts or walnuts, i just didn’t because there was none in the cupboards – oops. Enjoy xox
