Chocolate Orange Protein Cookies (With A Gooey Middle)

Baking with protein powder isn’t always the easiest, so when Bulk Powders challenged me to create a recipe with products from a surprise hamper i was a little anxious to say the least. I literally had to create my own recipe, from scratch. The ingredients, the measurements and make it actually taste good. I was given chocolate orange protein powder, fine Scottish oats & egg whites. My initial idea was a protein bar, however this seemed like the easy option and one i’ve already created on this blog before. So i set out to create a chocolate orange protein cookie. That not only tasted great, but was soft, chewy and had a gooey middle. Something you’d typical associate with a sugar filled unhealthy cookie. Thankfully (and luckily for you) i managed to create something that i’m pretty darn proud of! They’re the perfect ‘naughty but healthy’ treat and will curb all your sugar cravings. Ingredients

Method

  • Pre heat over to 175 degrees C
  • Combine all ingredients in a bowl into a dough (apart from chocolate chunks)
  • Take 1 tablespoon of dough, place a chunk of dark chocolate in the middle and roll into a ball.
  • Place all cookie balls onto a lined baking tray (this should make about 8-10 cookies)
  • Take a fork and gently press down on cookies so they flatten slightly.
  • Bake for 8-10 minutes (depending how soft you like your cookies)
  • Leave to cool (if you can resist)
  • I sprinkled mine with a teeny tiny amount of icing sugar (but that was mainly for the photos…)
