How To Make Easy Protein Pancakes

Who doesn’t love pancakes? I mean seriously, i’m addicted. But having the not-so-healthy-syrup-covered-american-style ones isn’t a sustainable solution for a ‘healthy’ lifestyle.  So, to solve this problem i make a really easy 3 ingredient, protein packed version that i could quite happily, and healthily have every day.

Ingredients

  • 1 Banana
  • 2 eggs
  • 1 scoop vanilla protein powder (or any flavour) 58g
  • Fruit topping of choice
  • Organic maple syrup

Method

  • Mash banana in a mixing bowl
  • Add in both eggs and protein powder
  • Using an electric mixer combine all ingredients (like a pancake batter)
  • Put 1 tablespoon of oil of choice (i use coconut oil) in a pan and heat up
  • Place 1 scoop a time of mixture into pan (i make unto 8 small pancakes)
  • Cook both sides (they will cook really quickly, so don’t make a cup of tea during…)
  • Put all pancakes on a plate, sprinkle over fruit, maple syrup or any toppings of your choice. (i top with natural nut butters sometimes – YUM!)
