You know me by now, i’m all about easy, quick recipes! (You can see my yummy protein treats here) Partly because i’m inpatient, but also because i don’t have, or want to spend money on, most ‘fancy’ ingredients all the clean eating recipes have in them. So when i was looking for a healthy brownie recipe i was a little disheartened. May i also add, i tried to make ‘sweet potato brownies’ last year, and in all honestly, they were absolutely disgusting. I must have done something wrong, despite thinking i’d stuck entirely to the recipe, and i swear the ‘these tasted amazing’ comments on the internet are actually people in denial, or maybe they gave up and just chucked a tub of sugar in instead. I dunno. But they were-not-for-me.
Anywho, after looking at about 10 different nut butter brownie recipes, i yet again grabbed what i had in the cupboard, and hoped for the best. When i first started combining the ingredients, i had the ‘oh god, what have i done’ look, as it went kind of ‘glossy’ – thats the best way to describe it. But after 20 minutes in the oven these nut butter beauties came out, and they’re literally delicious. Gooey, thick, but not too sticky. Everything you want in a brownie. Oh, and they’re healthy too! So i helped myself to 3 and didn’t even feel a little bit of guilt. You MUST try them! (recipe & method below) xox
450 grams Nut butter (i used this one)
280 ml (1 & 1/4 cups) maple syrup or honey (i use THIS ONE)
1 tablespoon VANILLA EXTRACT
1 teaspoon BAKING POWDER
1/2 teaspoon salt
6-8 chunks dark chocolate chopped up fine (or choc chips) i use THIS ONE
Then literally combine all the ingredients in a mixing bowl, line a baking tray with grease proof paper, spread out the ingredients evenly and bake on 170 degrees C for 20-22 minutes. Leave to cool before cutting – if you can resist! For my other yummy recipes see them here!
